Dalmatian Fritters - Fritule

Ingredients

500 g flour
25 g yeast
2 whole eggs
50 g raisins
50 g figs
2 dl milk
0, 5 dl brandy
1 spoonful of olive oil
60 g sugar
pinch of salt
orange or lemon zest
confectioner’s sugar for dusting
oil for frying

Preparation

Pour a small amount of lukewarm milk into a bowl, add 1 tablespoon sugar and yeast to melt, and leave in a warm place to rise. In another bowl stir together sifted flour, whisked eggs, raisins, chopped figs, brandy, olive oil, milk and orange or lemon zest. Finally, add yeast to the other ingredients and knead dough, leaving it in a warm place to rise for 30 minutes. Heat oil in a pan until hot. Scoop the dough with a spoon and put into the hot oil, frying the fritule on low heat until the fritule are golden brown on both sides. Place the fried fritule in a serving bowl, dust with confectioners’ sugar and serve warm.
